Try this for a fresh twist on this all-time favorite:
Peel and slice a large, heirloom tomato of your choice.
Mince your favoirte herbs.
Butter two slices of bread as you normally do for grilled cheese and use mozzarella cheese (pat dry with lint-free tea towel if it is very moist) and grill in a heavy pan on the stove top. After both sides of the sandwich have been grilled and cheese is beginning to melt, remove to a plate and openn the sandwich--place a slice of tomato on the melted cheese and sprinkle with herbs and salt to taste.
Be sure to have a napkin at the ready...the juicy tomato may dribble down your chin!
